Ray Luetters applies the concept of

restaurant-as-theater all the way down to the dinner plate.

“When I construct a dish, there’s a leading lady, leading man, supporting cast and chorus,” says Luetters, who left a career in musical theater to become a chef and eventually the chef-owner of Washington St. Bistro in Morristown. “All the elements work together in this performance that is now your food.”

In this Holiday’s edition of Edible Jersey, a full article features the Chef and Owner Ray Luetters’ interview about our popular salad. Mentioning his background as well as historical Morristown’s past, Luetters talks about his inspiration for the salad, and how he goes about creating a dish.

The recipe for the Wilted Kale and Brussels Sprout Salad is on the next page of the 2014 Holiday magazine, and on the Edible Jersey website.
